Expect nothing less than amazing gluten free options at the "Happiest Place on Earth." Disney employees are highly accommodating and normally well informed on their gluten free options. If you go to City Hall in Disneyland, they keep an up-to-date list of their gluten free options. They offer gluten free buns for hot dogs and hamburgers at most of their restaurants, and pasta or pizza as well.
The Plaza Inn has amazing gluten free Mickey waffles. They serve regular waffles with gluten in them at the buffet, so ask to speak to your server and they have the chefs make the gluten free ones specially.
Big Thunder Ranch has a rich gluten free flourless chocolate mousse dessert in the shape of Mickey.
Storyteller's Cafe in Disney's Grand Californian Hotel has gluten free pancakes and waffles, and have offered gluten free flatbread in the past. Disney makes it easy to enjoy great food with your entire family and won't let you or your kids with allergies feel like you're missing out. For dairy allergies, ask your server which items don't contain dairy. They are more than willing to make a cheeseless pizza at different restaurants and will inform you which options at each place are free of dairy. Unfortunately, they don't have a current list available.

The Mickey Mouse waffle and chocolate look very cute. I like the fact that they are prepared gluten-free.
